Oven-Roasted Potatoes

3 lbs red skinned potatoes, rinsed, and cut into similarly-sized chunks |

Salt and pepper |

1 Tablespoons Italian seasoning |

Extra virgin olive oil |

Chef or Santoku knife (your preference) |

Preheat oven to 425 |

Arrange potatoes on rimmed baking sheet |

Season with salt, pepper, and Italian seasoning |

Drizzle liberally with olive oil. Toss to coat. |
